It's black sesame seed. That's just sesame seed with husks.

I live in New Zealand and its really really hard to find african cuisine here. I only had the chance to try fufu once at a market and i remember liking it a lot. Having a lamb stew tonight n really craved this but had only normal wheat flour. This is great

If it's still sticky when cool, that means you didn't get it from the start. You added too much water when making it from the beginning. You can try it once more, but follow the instructions exactly as it was given in the video. Even if you are using a low gluten flour, it will still come together when cool as long as you follow the instructions properly. Don't worry about the mistakes, it's a learning process. I know I made tons of fufu mistakes when I was still learning to make it, but with time, it became a part of me.

If you want a better tasty fufu. You should use plantain and cassava. blen those together with some water. And pure the fufu mixture into the pot or pan you are using and stir and while stiring add some water and continue when its done.

No, the sesame seeds are not called Igbo. Igbo is the name of a tribe that processes one of their local seasoning this way and the processed seasoning is called ogiri in Igbo language. Many tribes have many seeds they process in different ways. Ogiri Igbo simply means ogiri from the Igbo land.

I love this! I searched to set out to find a flour version to verify my conclusions to be right that as an African American I've been eating "FuFu" all my life. I find joy in saying that. It is basically what we call old fashioned drop dumplings as my mother and grandmother taught me to make and as I am eating for lunch today with stewed down chicken and vegetables: Such as carrots, onions, celery, peas, corn and okra. Only difference is the African way is you steam it while turning it with the hot boiled water, rather than as we do it by forming a raw dough first with cold water soft butter mixed into it, a pinch of salt to taste and pulling off into pieces to drop into boiled simmering water to boil it until it is cooked through. it is a dense version fufu to be chewed not swallowed but is still the basic sustenance of flour and water or ground meal or grains pounded or kneaded into dough used to sop up gravy. soup, stews or sauces. I have heard people compare it to mashed potatoes, I don't think that is the correct comparison. It's more like a pliable biscuit or dumpling to me. Not so unfamiliar this wonderful dish, it's versatile and delicious.😍😋
