I never heard of Falk until today, though I've had Mauviel copper since 1986 (tin-lined) and upgraded to stainless-lined Mauviel around 2008. My 2008 Mauviel is their now defunct "Cuprinox Style" line that's 2.0 mm thick instead of 1.5, and includes a slightly flared top edge to the pans like your Falk has here (it's supposed to make pouring things easier), and stainless steel handles. Having had both 1.5 mm thick Mauviel originally and 2.0 mm thick Mauviel now, I don't think the thickness difference matters all that much for a home cook, and the downside to 2.0 mm thick is the pieces can be quite heavy and unwieldy to pour from and wash (depending on the size and shape of the piece). The 2008 economy crash did in this thicker/more expensive mid-range Mauviel line (Cuprinox Style) and I had a scramble to get the pots I needed before it was gone, so I ended up over-buying and having WAY more than I actually need, but I still love it. For most people I would recommend probably at most five or six pieces. For cleaning I like Wright's copper polish, including the sponge that comes inside the jar and that you leave inside the jar to use over and over.

Thank you for this detailed, scientific review. I've been watching videos about dutch ovens and braisers, and everyone seems obsessed with Le Creuset (and enameled cast iron, in general). But they're wildly expensive and very heavy, so I had hoped to find evidence that stainless steel would be at least as effective. Thank you for giving me the evidence I need to buy cookware that is both cheaper and lighter! Also, another positive about stainless steel over enameled cast iron is that stainless steel isn't prone to getting scratched by metal tools. If I purchased enameled cast iron cookware, I would need to buy a whole new set of cooking implements that are either silicon-coated or made of wood. The costs would keep climbing!

I keep the liquid and powder bar keeper's friend on hand. The liquid works best for the kind of rainbow spotting that SS pans in the cooking area get while the powder works best as an abrasive for those dark caked on spots that burn on to the outside and sometimes in the higher parts of the cooking area and especially works well for cleaning around rivets.

I own a variety of Demeyere Atlantis and Proline pieces - fry pan, sauté, saucier, saucepans, and honestly, this is my most used pan. It’s so versatile, especially if you cook a range of different cuisines. The use cases you mentioned were spot on, but another one I’d like to add is that it works great for finishing/assembling dishes, when you need a broad cooking surface. Would I choose this to sear a ribeye or pork chop? No, nothing beats my Proline. I appreciate that on paper, this is technically inferior to other pieces, but day-to-day, there’s something about this that makes it way more practical and inviting to cook on. Perhaps it’s the combination of lighter weight and dual handles. Either way I love it.

I agree. Demeyere seems to be struggling to manage their product line. Their options are confusing. For example, in Netherland Belgium webiste, they have atlantis 7, proline 7, multine 7, multifunction 7 and silver 7. Multifunction is just about the two symmetrical handles, mutline seems to be lightest weighted, silver 7 claims to have double-wall lid but lighter than Atlantis. Just a messed up PLM. If they have the best Atlantis, why trickle some part of the features down to others series without any distinguished benefit? Pans/pots are either heavy and good performance or light weight and poor performance, i guess they are trying to find a sweet spot in the middle and derive so many sibiling production line? I also have no clue about their sepcialites 7. They need to be specific about their 7-ply structure, otherwise, fancy naming means nothing.
@mq46312
@mq46312 26 күн бұрын
It's even more confusing now. Before on their website they clearly listed each product line (Industry, Atlantis, Apollo etc....) and you could go into each of them and see the pans in that product line. Now they just show all the pans at once and you have to manually filter through each product line to see what's it contains.

I've got the Atlantis line and all 3 major cooktops (gas, electric, induction) and the induction is quickest to respond and use. Slightly less evenness than electric and about on par with gas. I prefer my thick-bottomed fissler cookware on the induction but both preform very well on all surfaces. About as good as you can get as long as you're not trying to toss and saute.

I’ve bought 32 cm Multi-Function pan a couple of years ago as an addition to my 28 cm Proline. I wanted a decent stainless 32 cm pan, but Proline of this size was too expensive and a little bit too heavy (and, yes, too big for the oven). So, I’ve got 32 cm Multi-Function for something about 160 euros (without a lid). I like it quite a lot. It’s not as great as Proline, but still it’s a very very good pan.

I was looking at this pan as well! I believe the 2 handles are better for people with wrists issues (carpal tunnel or arthritis etc). The Demeyere atlantis long handles make it hard to hold the pan because the grip is so far away from center of gravity. Shorter handles make it easier to do things like pouring out liquid, tilting to scoop stuff, or serving on the table. I found out Demeyere also have a Multifunction 5* pan that's 7 layer and 3.0mm ... Now I don't know why they would do that and just confuse the heck out of me.

For this price i think there is enough value. I knew it wasn't going te be on par with the Demeyere pieces i own, but i just really wanted to replace my old ikea pots that i use for boiling stuff. What is your pan of choice? Sounds like the Demeyere Pro Line... I bought the 10" All-Clad D3 skillet during an amazing sale (under $100...and you're right, you can get the 12" with lid for $129). I find the 10" a little cramped but the 12" is too big for my burner. I like that it comes with a lid. I find the handle of the lid gets super hot. It's the only part made in China (assembled in U.S.A). Maybe I shouldn't blame China...I prefer cooking in my Demeyere Industry 11"...I wish it came with a lid. The Proline is too heavy for me....For my purposes the D3 is fine...but I hear ya.' On another note, could you do a video for a good 3.5 qt. saute pan/with lid. I have a Demeyere Industry 3 qt. with lid and find it a bit cramped, heavy and unbalanced. I find the sides of the All Clad D3 too shallow. The rec from many has been the Made In 3.5 qt. Curious what you think...In any case, I'm going to replace the Demeyere (also bought during an amazing sale) before I break my arm or drop the pan...sad.
