Good to see you back! It's relatively rare to see retrospective reviews after longer-term use. So that was interesting. Also, thanks for the chapter bookmarks!

The value retention is a great point. Good pans are always a great investment but even more so when it's easy to get a gold chunk back if you need to. Great video as always!

It's quite distrurbing to read of the now several cases of Demeyere Atlantis/Proline incidences where the handle has come off the pan. As an owner of 3 Proline pans, I will definitely be careful when deglazing the pan in hot water after using it - remember to let it cool completely off on the stovetop before bringing the pan over to the kitchensink. Dropping a pan full of boiling water can cause rather serious injury.

Yes it's disturbing & even dangerous if the handle falls off while you're cooking, but at least their 30 yr warranty is reassuring in the event this occurs, huh.

I have a few Demeyere frying pans and indeed the handle fell off one. They handled it promptly and the issue was definitely a combination of poor workmanship and what appears to require a very precise angle of attachment. If there are ANY gaps between the handle and the pan, I would contact Demeyere. If the handle is totally flush with the body and you can't slip a piece of paper between the two, then they'll probably be totally fine. My guess is these were manufactured during the disruptions of the pandemic. As an aside: we also have several Fissler pieces. While they aren't as pretty, the performance is quite wonderful. Zero problems with those. They are our favorite. Anyway, all these were bought on your recommendation, so thank you for all your videos! You are a treasure! 🙏

When did the handle fall off? Was it on a recent purchase?
@soniCron
@soniCron Жыл бұрын
@@mq46312Yes it was about 6 months ago. Bought directly from Demeyere and shipped within the US.
@soniCron

I should add: it fell off within the first day. Definitely NOT mishandled. There was no warning either. (It wasn't jiggling or anything.)

@@soniCron That's bad luck. But good that it was resolved quickly.

It has occurred too frequently to be a product of bad luck. If Demeyere was hugely prolific,a few stories would make sense. For a pan that has practically no presence in the US, the number of incidents is striking.

Bro i love u ! This channel is ton of demeyere knowledge ,which is fairly hard to find. Cuz of this channel i snatched demeyere pro skillet(24cm) for 105€ brad new. Now 4 months later god damn. Absolutely monster of pan ,best one i never used. I toss my carbon steel ,non stick(it was fo my girl) & cast iron skillets away. Now im with yoshikawa iron wok(super nice wok btw) ,demeyere pro skillet ,& can do all as good ,if not better than old pans. Nothing stick ,sear is better than ci ,just wow. Now im between demeyere conical sauce (atlantis or apollo) vs falk copper one. Hard to choose. I liked to try copper (falk is 2.5mm pure copper & 0.2mm stainless) so sauce wise it should be good. Choosing cookware is hard as fk. Thank u doing these vids man ,have a great week🫡 P.s after my lil bro tryed pro skillet ”this is one i want for christmas” Now im building him set: pro skillet ,classic cooking pot & few hand made japanese artisan knives(Nakaya Heiji is blacksmith) He should ve happy with those 😆

Yeah their 24cm was a steal at that introductory price of 105€. For several years in the States it could be purchased for only 85€/$95. Now it's back to suggested retail price of $240/219€. You might check out the Atlantis 5.1 quart saute pan with it's impressive disc. A 3.6mm/0.14" layer of copper sandwiched between two 1mm layers of pure silver. Perfectly flat surface. A level above their other pans.

@@SmokeyTreats i been thinking giving pro skillet to lil bro and getting atlantis saute for myself s,& 3.6mm sound optimal to sauces ,pasta ,risotto etc. But i ended up buying atlantis conical sauce since it do everything well what pro skillet lack. Pretty much optimal combo imo. Pro skillet ,24cm atlantis conical sauce & staubb cocotte. Allmost perfect pairing and lil to non overlap function wise. I like to keep stuff minimalistic as possible

@@qifgt Their conical saucepan is a beauty! I went with 5-ply Made-In for my pots & a couple of non-stick fry pans, & chose Demeyere Atlantis for my 2 SS skillets & saute pan. The disc on the bottom of the saute pan retains heat when you flip whatever protein you're cooking, better than the Prolines. The best sear, plus it's flatter than the Prolines.
@qifgt

@@SmokeyTreats gotta say i doubt sear part. Since pro skillet is thicker it sear better & conical side remove moisture better than straight and that cause better sear too. Less moisture= better sear. Mby its due user error. My pro is death flat(if u dont mean side walls). Pro skillet is part of atlantis line. Fo some reason (probly cuz bottom not disc) the call it pro. Good to hear u happy ,i dont use nonstick cuz carbon steel & stainless do everything better + im not liking idea of cooking in toxic surface🤷🏼‍♀️ My carbon steel is more slippery than new tefal pan ,biggest part with these are heat control.

@@qifgt The disc is over 3/4" thick, considerably thicker than my Atlantis 9.4" & 11" skillet bottoms. You're comical, as I've been using these pans for over 3 years & you don't even own the pan I'm speaking about. Dude, just f-off with you're user error comment! There is NO issue with moisture when cooking a huge steak in my saute pan because of straight sides. It could be if the skillet was filled enough, but certainly not one really large steak. I'm done with you, you have a serious id10t error. Bottom line is the second side doesn't sear as well on the Prolines because they're not as thick so they don't retain the high temp that the disc pan does retain, dim one. The Prolines don't have 3.6mm layer of pure copper sandwiched in between two 1mm layers of pure silver either.

Thanks again for a great video! I'm wondering for a while now how putting them in the dishwasher will affect the looks. I find online that other stainless steel gets more dull over the years if using the dishwasher but I cannot find proper information on stainless steel with a Silvinox treatment. Is there anyone that is putting them in the dishwasher for a few years now and can tell me if it makes any difference?

Great reviews, i saw almost all of them, as Demeyere owner, i can saw they are holding very well, even the Resto series is very good for the price. Next update will be with Atlantis series. Please where you search for second hand ones? (Are the any local sites in NL or BE) Many thanks!

Is there a noticeable difference between domed vs more flat lids like these pots have?

A professional chef might disagree but I would say that for the average home cook (like me) there is no difference. But which domed lid are you referring to?

Do you still feel that the Demeyere pans offer a worthwhile advantage over Fissler Profi after having some time to use them?
@mq46312
@mq46312 5 ай бұрын
Fissler is a very good product but I would choose Demeyere over Fissler. I feel that the Demeyere pans (especially Atlantis/Proline) offer slightly better build quality. Demeyere also has a more comprehensive product range.
