@@kayicox2367 if you have a wired thermometer, you can push the probe through a halved onion or potato, making sure the probe goes all the way through and tip is exposed (making sure the wire goes through the vent on the lid) and sitting that halved onion/potato on the grill grate. The receiver can just hang on the handle of the grill.

I have the camp chef smoke vault 24 and have done 15 of the Dino ribs before in it. Does a great job. I use the bigger wood chunks and did pecan and hickory for them great smoke and great flavor. I cook mine between 225-250 for 3hrs then bump it to 260-285 for the remainder. After 2 hours as long as bark is set I spray it every 45-60 minutes with apple cider vinegar/water/worchester sauce mix. I wrap with butcher paper also at 165 cook to 208. I let mine rest 2hrs wrapped in a towel in a cooler. Great review on cooking these great beef ribs

I scored a completely unused Oklahoma Joes offset smoker in the metal bin at our free dump here in SW NM. Nothing had ever sat on those grates. No soot build up. Nothing. Just some rust from sitting outside. It also had two broken thermometers from what appeared to be rolling it out of a truck. No wheels either for some reason. I have been using it regular for over a year now. Smoking a shoulder today in it. I can only assume that someone’s “ol lady” threw it away while mad at her man. Lol. I really don’t know. But it’s like finding $600 at the free dump… but better.

Hi Brandon, I have both a charcoal grill and a Landmann Fryton 4.1 gas grill. You can still get smoke flavour on a gas grill, you just use a stainless steel smoker box.Fill wil hickory or other types of wood chips then place the box on top of your grill bars. When you use wood chips on charcoal grill you need to soak first, but on a gas grill they smoke better when they are dry.

You can close both vents on a Weber kettle and that will starve the coals of air and will prevent them from wasting. I then place the old coals in a chimney and relight for the next use.
