In Hungary, we make it with a whole head of fermented cabbage (savanyú káposzta, Sauerkraut), not raw cabbage. Freezing it won't impart it the tart and rich fermentation goodies.

I recall the bialy’s rest on cornmeal to raise and then get transferred to the baking dish. You don’t want to loose the crunch of the corn meal that sticks to the bottom. Native NYer here.
