It's a demi glace cube that is frozen in an ice tray per serving. This is normally how restaurants store them. Trust me - it's a must try if you have a day or two to reduce a broth.

I used to work at this really nice high end restaurant at a resort area and employees could eat off the menu with the exception of lobster. I worked there for 3 years and had steak poo poo every shift. I'd switch between tBone, ribeye, strip but same thing every shift baked potato and butter broccoli. I probably should have had 5 heart attacks by now but even my cholesterol is low at 60. Weird.
