Using bamboo as wood pegs isn't something I have ever seen before. Most of the time I see bamboo being used its usually for more structural applications like scaffolding or used to make everyday items.

The thing he crushes up is a brick of jiuqu, a traditional Chinese fermentation starter made of cooked grains that have been allowed to partially ferment with airborne and grain yeasts, then formed into a brick and dried for later use in making fermented mashes for alcohols.

Use rain or distilled water. I can tell he did or has very soft water, or else the top would be salt on the finished pieces. It is a better glue not salty. Hope that helps someone who can't read that stuff either, I know from making hide glue.
