Best thing to do is buy steamers that have been purged. Second best is to soak the steamers in a large cooler with water from the ocean where they were harvested. After that I say tap water because if you’re just soaking them in a pot they will use up all the oxygen in the water and die before any real filtering happens.

Would the chicken not be overcooked? Other chefs remove the chicken and then make the sauce. On the other hand, he fries it very briefly at a high heat, so maybe it's fine, but probably quite difficult to get right for an amateur.

piggy back on Allisons question, do we have to check the temperature on each piece or just checking to see if they are thoroughly cooked is sufficient. Also what if I don't have one of those racks, can I just take them out and let them sit on a backing sheet?

Chicken should be cooked to an internal temperature of 165 degrees. Using a thermometer to check this is the safest practice. If you don’t have a rack you can put the chicken directly on the pan.

You want to make sure the chicken is not cut too thick. 1/8 of an inch thick max. Cook until golden brown about 6 minutes.

Yeh, this is the right video for French Chicken. I've seen 7 today, and even though this one is a little hard to hear, it's the one I decided to keep because (1) he cooked the chicken right, (2) he gave me a tip for cooking pasta ahead, and (3) he plated up a full dinner with the wilted spinach. That's a pretty plate, too. I garnished with roasted red peppers to make a red, white, and green plate. Chicken Francaise is actually an Italian-American dish.
