Hi, most recipe I've seen use 3:1 (chocolate:cream) ratio, but this video uses 5:1 ratio. Does it have something to do with hot weather? I live in a hot country, so I would like to follow this if this version is more stable

Hi Syazana! Yes. I'm from the Philippines and the weather here is from 34-38 degrees. This recipe is perfect for very hot weather :)

Hello! I noticed in the comments that you used compound white chocolate? Is this better than coverture? Will it hold up better in the heat? My attempts to make white choc ganache always fail because it splits every time 😭. Interested to try your method!

Hi Aisha! I haven't tried chocolate couveture. Compound always works well with me. This recipe can stand 38 degrees. I hope that helps :)

@@craftyconfections1005 Thanks so much for replying! Managed to get my hands on Colatta chocolate, just as you have used. I hope it will work out well for me. I've been using swiss meringue to cover my cakes, but they melt in the heat. I'm excited for this option!

Hi Geeta! I use water or edible glue to stick gumpaste/fondant. Vodka mixed with food gel or edible dust to color :)

You can also use gumpaste. You can also find a model/sample of the topper that you want to make.

Hi Hina! I am from the Philippines and we don't have winter. My friends in the US use a 3:1 or 4:1 ratio. You can try which one works for you :)

Hi Whipped Dreams! Not really if you balance the flavors. Choose a cake filling that will compliment with the ganache :)

Hi Jenny! Yes pwede mo ilagay ang cream sa isang sauce pan at initin over low heat. Pag may nakita ka na mga bubbles sa palgid ng cream. Patayin ang apoy at ibuhos ang cream sa white chocolates Good luck!
