My grandmother learned how to make fermented foods from her mother. We make it with our own pastured eggs, chopped Sechler sweet pickles, avocado oil, salt, lemon juice, mustard seeds, grey poupon and juice from our own sauerkraut.

Do you cover the mayo for the two days it is on the counter? I get fruit flies so I am going to use a coffee filter and a rubber band. Will that be okay? I only have one air lock that I'm using for my first batch of pickled veggies. I don't know how they are turning out yet but I can't wait to find out. I'm going to taste test them in the morning. I used a 3% salt brine so maybe should I use less salt?
@TheCozyCookhouse7 ай бұрын
I would definitely cover up with coffee filter, or a breathable cloth, so fruit flies won't go in. I made this particular jar when it was still pretty cold outside, so there weren't any fruit flies yet. Also, for the brine, make sure you use something that is of an actual ferment. So, something with live bacteria in it, which will kick off the start of the mayo fermentation process. Without a fermented brine, I would be worried about the mayonnaise and would not leave it out on the countertop, unless it has fermented brine added to it, which is what preserves it from going bad. Hope this helps.
@apexiumim27412 ай бұрын
@@TheCozyCookhouse Question about fermented brine. Say for example I make pickles and once done the jar is in the fridge. Is taking brine from that jar after a week or two in the fridge ok? Or would I need to use brine during the 4th or 5th day of the pickle fermentation process? Asking because I would like to know if buying fermented pickles in the grocery store (refrigerated section) would be fine (brine wise) Thanks!
@TheCozyCookhouse2 ай бұрын
@@apexiumim2741 refrigerated homemade brine is ok. The bacteria is still alive unless it has been processed through heat, cooking, or pasteurization. This is why the store-bought won't really work because that brine is processed and there is no assurance that there is any live bacteria at all.
@apexiumim27412 ай бұрын
@@TheCozyCookhouse Ok thanks for the information. I will check the health food store in my area and see if the sell fermented only pickles etc. otherwise I’ll just make as per your recipe and will have to wait 5 days for mayonnaise 😂

I've been making my own may for years, but will have to try this version. What if I don't have any fermented liquid? Does any pickle juice work?
@TheCozyCookhouse9 ай бұрын
It's very important to use any fermented liquid to help preserve this egg based mayo, otherwise it will spoil quickly and it becomes dangerous for health. I recommend any kind of ferment, including sauerkraut, naturally pickled cucumbers (not the vinegar type, in its own brine/ferment), and even kombucha vinegar or apple cider vinegar (with their mothers). So anything with a live culture in it to help preserve this mayo and continue its fermentation process and flavor development.
@shellic51666 ай бұрын
@TheCozyCookhouse would water kefir work? I think apple cider may change the flavour too much. But not sure if kefir would work. Thanks for this great video ❤
@TheCozyCookhouse6 ай бұрын
Water kefir is, in essence, a natural ferment, but from what I know, this fermented mayo recipe requires a lacto-fermented liquid to kick off the start of the fermentation process. So I don't have an actual sure answer regarding the water kefir component.
