This is Great, but I don't remember having yellow potato chips in the sixties, white potatoes fried in beef fat and battered Haddock , the closest I've had is Chess's Fish and chips in St.Johns NFLD Canada... Just sayin

Fish n Chips is a matter of taste. Some of the prize wing FnC’s are terrible. My wife has got it down to a fine art for me. She knows what I like and how I like it. The Chinese down the road does very good Chips in gravy.

Its where ALOT of chippys go wrong, if the chips are even slightly undercooked they come out anemic and sloppy it ruins the whole meal that's why it's nice to see you put effort and care in your cooking , the chip shops near me are awful because they don't have standards

My husband was born and raised in Glasgow until he was 12. Came to America, to the East Coast, and was able to find very nice restaurants that serve decent fish & chips. We now live in the Midwest (of the US) and restaurants do not know how to make a proper Fish & Chip meal. My husband's memory and the taste bar he has set is extremely high, and although we continue to search for a good fish & chip meal, we are disappointed time and again. So, I am trying to convince him to venture into a new business, a propper Fish & Chip shop. My question is this; do you think "frozen filets" are a reasonable substitute for fresh, and if so, what should we be on the lookout for? Thank you for your time.

Oh dear. First disagreement: 'fresh frozen' is not, and never will be better than fresh fish. Your chip portions look a little undersized and a bit bit pale but as your customers seem to enjoy them, I will let that slide. The mushy peas look to be outstanding. Where are the scraps?. Overall, your chippy looks pretty good and will not get better until we see the return of newspaper wraps.
