Use grade A beans if you want the best flavor. The FDA says to be called pure vanilla, it's one ounce of beans to 8 ounces of 70 proof of liquor.

In order to be a extract witch is a concentrated food flavoring. With grade B vanilla at 20-25% water content you need a min of 0.83 oz by weight of vanilla beans to 8 fluid oz of 70 proof or 35% abv of alcohol. If your vanilla is grade A 30-35% water content you need to up the ratio to 1oz by weight the same 8 fluid oz of alcohol. That is the standard ratio's in the United States. The Madagascar grade A vanilla beans average 9-12 vanilla beans per oz weight. So you would need way more vanilla in your bottles to make a true extract flavoring. So technically your making flavor alcohol. The IP is always brought up in conversations on my channel and there are many seasons not to use it. 1. The manufacture doesn't recommend it, as Alcohol doesn't react well under pressure and creating a potential explosion. There have been reports of this happening with devastating results. 2. The IP gives you a false sense of a completed extract. It does change the colors but it doesn't extract many of the 400 flavor compounds in the vanilla bean. 3. The high heat kills some of the flavor compounds so you will end up loosing many of those awesome flavors. Please be safe.

I’m not sure if there is a price difference but grade B beans are best for bottled vanilla. Also not sure why, but that’s what I use. Also I don’t cut it open. Always comes out great…..6 month’s version. I can’t use an insta pot because the beep sounds it makes frightens my dog! Sounds like her invisible fence collar. Just sorry it took 3 uses to find this out 😢.

I've used vodka (Large bottle) of course but I've also had good luck using ruhm and bourbon (5ths) each gives a wonderfully subtle difference in flavor.

I started 2 quarts of vanilla several years ago. The way I never run out, is to use vanilla from quart #1, until it's about 1/3 gone (it still has 2/3 vanilla left.). I fill it to the top with vodka or rum, and put it behind quart #2, to give it time to process. I start using vanilla from quart #2, for my baking and any gifts of small bottles I want to give my grown kids. I just repeat that process, adding more vanilla beans into the quart jars (leaving the original beans in the jars), every 4-5 years. So far, it's worked wonderfully, and I've never had to wait a year, for a brand new batch to process!

The alcohol used for vanilla is measured by volume, not weight. So those are 8 oz to the bottom of the lip, so you should be good.

Long tweezers we use for cake decorating (me) or pulling fish bones (my husband). Once you pour some liquid off, you can tip the bottle to the side. Also one year I had poured off all the vodka into small bottles for gifts so I could dump the bottle out

Hi, if you didnt let the pot naturally release, the liquid would siphon out of the jars, because of the fast pressure change. And if you didnt do it in jars the alcohol would be evaporated. Its great to see it can be done in the IP.

Yes, it's true about the additives in pre-shredded cheese. It's called cellulose, & it's almost always in the parmesan cheese with the green lid & label. Generally any big name brands. I've never seen Swiss cheese pre-shredded though, (but I live in a very rural area with just 1 grocery store) so you did fine by shredding your own. I love eggs any old way, so I look forward to trying this recipe. Edit: For us "old folks" who watch you, you might consider turning down the volume of the background music so we can hear your voice better. Or just forget the music all together. You & the recipes are plenty entertaining on their own. 😊
