There were a lot of big brain moves from this cop. He waited until the bike was over the hill to turn around so the biker didn't see and flee. He followed from a distance until the guy was off the bike. He acted quickly and decisively to get the biker on the ground, then slowed down and waited when he had the option once he was disarmed. Rather than go hands on with someone who had at least one weapon, he waited until he had backup so he didn't have to risk having to wrestle with the guy and potentially injure him/get injured. Out-freaking-standing.
