Just an idea to throw out there Tom,but when you go to salt the grits,why not kick things up a notch by seasoning it with smoked salt?

I am working out of town staying in an Air BnB. I had a Weber kettle grill delivered here this week as I will be working here well into next year, so ..... anyway, the local grocery has a nice meat dept. and they have Picanha. I have never had one as most of the stores and butchers in my home area do not regularly offer it. With your fine recipe, and the opportunity in front of me, I do believe I may be giving this a go this weekend. Hell yeah. Not sure on the grits though. Those look really good, but I am not a fan usually. Maybe I give them a go too.... cant hurt, I guess. Thanks CT

Y'all should check out the grits from Congaree Milling Co (they're online). They do actually hominy (nixtimalized) grits which is pretty unusual. I get all my grits from them.

Personally, if you are going to all the effort to make a nice organized skewer I'd leave it on, but sauce it towards the end of cooking. Would really glaze the sauce on. Otherwise I think it would work out better using a perforated half pan and toss everything in loose so the cheese can be pulled out sooner.
