Hello! Thank you for your videos. I have a Pit Boss Vertical smoker and I have full venison hind quarters that I want to smoke, on the bone, and am writing to ask if you have a video where you might have smoked one so that I can get the time and heat needed to do this on my own? I want to hang it and smoke it.

Thanks for your comment! I have smoked entire venison hams just like you have described. Since they vary so much in size, it's difficult to point you in the right direction. What I can say is that I used hickory and ran it at 225 until I felt like it was at the doneness I wanted. I want to say it was for 12-15 hours. Another helpful tip is to actually debone and truss with butcher's string. The Pit Boss Brisket recipe is a really good one to start with until you dial in your process. Hope this helps!

If you freeze your chunks of meat to a firm to hard it grinds faster and also aids in keeping the head cook also . If your second grind runs little slow you can in return also form the first grind up in the freezer to help the smaller grinders run a second run . I have the 1hp carnivore I have my meat partially frozen and add fat as I grind 1 run through the fine plate and it hammers down and never bogs so I get 1 grind and done instead of having to run two times

The part of the statement "incidental food contact" isn't confusing but makes me wonder how I'm supposed to lubricate the parts of my Cabelas No. 22 food processor for storage and operation. Do I just coat the parts inside and out for storage then wash them before use? I assume thats the way it works but it doesn't make complete sense when reading the instructions on the usage of the grinder and spray against the previous statement "incidental contact". | guess I'm answering my own question but I also think I'll call CRC tomorrow as well as Cabelas and ask for clarification. Am I retarded?

No man, you're good. It's a little confusing. So the main thing is to be sure you're equipment is clean before use, and before storage. In terms of lubrication, lubricate before storage to prevent rust and corrosion. You can use food grade silicone. If you store in an air tight container, you won't have to do as much cleaning before using again. Then, wipe down any equipment before use again, and be sure that nothing is without lubricant to prevent heat during the grinding process. If the parts are clean and still have lubricant, we don't re-lubricate again because we stored to prevent any dust or other contaminants.

Great idea! I would like to see some make with white Paracord. And wrapping the head with thread like a fly might make it better and tougher. I'd use red thread and white cord because red and white is a great combo for lures. I could see bigger ones working like bucktails too.

Almost bought the Cabela's Carnivore #8. It has some nice features over the Weston Pro #8 but 1/2hp instead of 3/4hp for the Weston. Both are nice grinders but the Weston Pro was on sale so I jumped on it. A huge upgrade from my Waring Pro 150 :).

What I did this year was use my food processor since I didn't have a grinder. I just watched the venison until it wasn't TOO much like mush. Then I added some pre-made pork sausage. One thing I regret NOT doing was adding more sausage type seasoning to the mix. It tastes more like breakfast BUGERS.

We have a big Hobart grinder and when we use it we always freeze the plates and all the moving parts and it helps it all stay cold

I use large germicidal disposable wipes after field cleaning the squirrels. The wipes are bactericidal, tuberculocidal, and virucidal in 2 minutes.

I grew up in Missouri and have many memories of my parents taking me there. My Boy Scout Troop used to float the Niangua River every Memorial Day. Bennett Springs is where I learned to fly fish as a 10 year old with my grandfather's old fly rod. Missouri is blessed with the beautiful outdoors of the Ozarks. I always tell people the Ozarks are one of the best kept secrets in the country. I left Missouri in the early 1980's when I joined the Marines and then my career bounced me all over the US. I live back east now, but I still enjoy going home to the Ozarks when I get a chance. Enjoy this time with your kids; they're only that age once and you don't get a do-over.

Wow, so now the 1/2hp has a reverse?! That is a game changer for me. If I remember correctly you had to step all the way up to the 1hp model before reverse was offered which was a big $$$ jump and to be honest that would be way more than I need. We have our own butcher shop (not a business) stocked with commercial appliances including a hobart grinder that came out of a grocery store but it is about an hour from my house. It would be nice to have a small grinder here I can run brisket trimmings or pork trimmings through whenever the time comes. Great demonstration BTW! 👍👍
