I have a question. I bought salmon and cod fish for my maltese puppy ( I dont eat any kind of meat, i am a vegetarian ). I cut it and threw it in the fridge in an airtight plastic bag. Shall I freeze the fish? This is my first time so I am not sure, dont want to give any disease to Simba.

Just watched your video today; great job. However, the coolest part was seeing that you visited the Santa Giulia Winery. We happened to book a tasting there in 2015 and finished off our last bottle of 08s last year 😒. We had to go back when we were in Tuscany again last fall. Only 2k bottles of their Reservas are made and i suspect difficult if not impossible to buy in the states.

I have a salmon i bought yesterday and stored in the fridge and like.. it /is/ the strongest smelling salmon ive ever smelt but the expiry date on the packaging says it should be good for another 3 days. I forgot to check for a film. I cooked it and it tastes fine but the smell is just- whew

I had the same thing! I cooked it, but couldn't get myself it eat it properly (I was picking at it). My husband ate it today, but he wasn't there to smell it when I opened the packet, so he wasn't put off. Did you get a stomach upset.

They're degassing the wine by pumping it through at 7:26 - not adding air to it. During fermentation it is not desirable to add oxygen to the must. This process removes suspended CO2 which is produced by the yeast during fermentation.

They are doing both and more. Fermenting grapes require oxygen. Therefore, they pump the must out, aerate it, while removing CO2, and then pump it over the top of the fermentation to help push the cake down. If the cake is not pushed down, the yeast will starve for oxygen. Furthermore, if the cake is not pushed down, the top will mold and a lot of flavor and color from the skins would be lost.

if an egg is going bad it will float put your eggs in a sink full of water carefully... the good eggs will rest at the bottom of the sink...a bad egg will have gas inside from going bad and float

This is really handy! (Especially actually having videos of spoiling food.) Sometimes my supermarket will sell prepackages lettuce, and when I open it up, the whole bag is a little slimy. I'm never really sure whether to trust the supermarket/expiration date or toss it. I never really know the line of how much 'slime' is ok to eat. (Like tomatoes get slimy pretty fast.)

Glad this was helpful! Definitely not great that your supermarket is selling bags that are already slimy. I generally prefer the plastic containers over the bags -- the greens tend to last longer. In general, I would stay away from slime. For lettuce, I throw out anything that is slimy. For tomatoes, you could try rinsing them underwater to see if that gets rid of anything, but in general slime is not a good sign and you shouldn't be eating anything slimy. Especially if they are accompanied by a bad smell. Always err on the safe side!

The freezer can be such an underutilized and forgotten tool. Pesto is super super easy, I will do a video on that at some point. Basically throw ingredients in a blender with enough oil to make a sauce and some cheese. Wish she was still around...

One trick that I started doing to extend the life of my fruits, especially berries, is that I will make a relatively strong solution of citric acid and wash the fruits with it and let them dry. This seems to be very effective against the fuzzy mold that you get on berries. I was a little apprehensive about this at first especially since pre-rinsing many fruits shortens their storage life, but I have done this with strawberries and blueberries that were on the edge of spoiling and extended their life by a good 4 to 5 days in the fridge.

Very interesting idea! I'll have to try this when berries are back in season. I could definitely see it working with the citric acid. Also think the key is that you let them dry after -- any kind of wetness always destroys my berries.

Great video! I always missed the value of salting eggs during cooking, instead doing it at the end (plated) only. Adding it during the cooking didn't seem to change the taste much. Was I just doing it wrong?

Depends on what kind of eggs we're talking about. For scrambled, I think it does make a difference to add salt during cooking (or even before when you're beating the eggs) because the salt has more of a chance to dissolve/infuse. But for over easy it probably doesn't make that much of a difference. Salting eggs is also a hotly contested issue with chefs -- some of them argue salting any kind of egg before the very end changes the make up of the eggs. I haven't found that to be the case. So the TLDR is as long as you're happy with how your eggs taste, keep doing what you're doing! And if not, play around with salting at different times and see what you like best.
