Just watched your video today; great job. However, the coolest part was seeing that you visited the Santa Giulia Winery. We happened to book a tasting there in 2015 and finished off our last bottle of 08s last year 😒. We had to go back when we were in Tuscany again last fall. Only 2k bottles of their Reservas are made and i suspect difficult if not impossible to buy in the states.

They're degassing the wine by pumping it through at 7:26 - not adding air to it. During fermentation it is not desirable to add oxygen to the must. This process removes suspended CO2 which is produced by the yeast during fermentation.

They are doing both and more. Fermenting grapes require oxygen. Therefore, they pump the must out, aerate it, while removing CO2, and then pump it over the top of the fermentation to help push the cake down. If the cake is not pushed down, the yeast will starve for oxygen. Furthermore, if the cake is not pushed down, the top will mold and a lot of flavor and color from the skins would be lost.
