I tried this and it was even better than I expected! The only thing I changed was the vanilla, which I replaced with almond extract. This gave it a lovely marzipany flavour, which I love 😊

I use honey instead of white sugar, everyone loves the flavor.

Actually, because the cheese is used, this dish would be classified as VEGAN, not vegetarian. Vegetarians do not eat eggs or dairy products. However, cashew nuts can be ground into a smooth paste that tastes like cheese when slightly salted instead of dairy cheese. :)

Looks more like a pudding than a cake, but seemingly worth a try.
