getting a BGE, I don't understand how to set a temp? what if I wanted a temp of 275 for 6-8hrs? thank you.

What are your thoughts about using this recipe and brining the turkey before? In the video, you didn't brine the turkey and just stuffed it with vegetables. Someone decides to brine will be changed the flavor.

Why would you use a second grill for reverse sear when you already have a grill lit. Just raise the temp on grill number 1.

cool vid bro, you make it seem easy but in truth this requires much attention. I could not help but think the entire time that having a device like a fan to boost temperature on demand would be very useful! Like perhaps one of those mini battery powered leaf blowers, just blasting the charcoal with it. If you have a wok then maybe there is no concern for charcoal dust getting on the food! Great video, thank you!

They were bourbon cherry smoke bricks, or you can use small pieces of your favorite wood chunks/chips. As he mentioned you don't want to overpower the salmon with smoke.
