I just bought a new gaiwan but it is really big so I am still using my old chipped one that has a metal filter. Does that mean it's not really a gaiwan?

I have never heard of a gaiwan with a metal filter. Big Gaiwans are harder to handle. I would suggest buying a smaller one and enjoying multiple infusions.

Is there a particular reason for boiling water and then allowing it to cool instead of using a kettle with temperature control to achieve the desired range? I assume the practice of using tools like a Yuzamashi probably originated from the lack of precise water temperature control in the past, which is now available. Does this method affect the flavor and quality of green tea?

Whenever I use Gaiwan, its too hot to hold. I burn my fingers. Is it my technique? Or the quality of the Gaiwan? I purchased mine at a tea market in Guangzhou, but maybe I purchased a low quality one.

I’m here trying to figure out what baozhong is… we specialize in exporting Japanese tea by creating an emporium of small scale Japanese tea producers Recently, we’ve had a lot of oolongs submitted for listing and one Shizuoka producer sent us “baozhong”. Super confused….it’s primarily just a lightly oxidized oolong? What qualities would I use to judge this baozhong made in Japan that was proposed to us?

I'mma big Fan of Irish coffee but once I mixed Single malt whisky with Earl grey and honey (once I used Tennessee also). Tbh it was lukewarm, I've tried with Ice too both are super good. Regular whiskey will work too but the taste will differ.

hope i can try some before i die. i've been able to sip most teas available where i live, but not the yellow. this epidemic certainly isnt helping, and im not going to buy tea on the internet.

Hi. I'm a Hong Konger now living in Canada. Thanks for sharing the video here. I guess the video was made in around year 2000. Those puerh tea cakes the people drinking in the video are legend now that people could hardly find to try them. They were drinking "宋聘號"(Song Ping Hao) and "同慶號", if those cakes are still exist, they are around 100 years old. In 2018, a cake of Song Ping Hao was sold in an auction for HKD$3.5 million (around USD 0.5M), I guess now will be even higher. Its value can buy a really nice house in Canada. I'd love to try those teas myself but it seems to be a mission impossible for me.

I only drink the Darjeeling Black tea, well known for its aroma and flavour, which is essentially the Chinese variety planted in Darjeeling, India. Would love to know the difference in aroma and flavour between the Darjeeling black tea and Chinese Black tea varities.

But if you put it in a container and in a fridge, the leaves are moist. Wouldn't bacteria grow?

The cold of the fridge slows bacteria growth so just don't keep it in there for more than a day ig

It depends on your tea. Basically 1/4 of the gaiwan for the tea

Summary starts at 2:40 *OPTION 1* Place used tea leaves on paper towel to let dry. Use dried tea leaves the following day. *OPTION 2* Place used tea leaves in an airtight container, then refrigerate the container. *OPTION 3* Brew the tea several times in the same day (each brewing is called an “infusion”). Collect all the infusions in a single container. Refrigerate the container. Drink the brewed tea cold on subsequent days.

Hi Tomas, The aroma is capture on the inside of the lid and you can smell it safely before or after you have poured. There is too much steam from the leaves when you first pour and when there is still water in it. Cheers Tania
