I like a smoke ring for competition, but at home it does not matter. My trick for smoke ring everytime is to put it in the freezer after prep for about an hour. Use salt as my first contact rub instead of a mix. While the briskets are in freezer I start my fire. Let it hit temp and clean smoke. I put meat on grill at whatever the coolest part is. The longer it stays cold the more pronounced the ring.

That is smoked corned beef. Real Pastrami is finished in steam after smoked to ~170ish. Not to say it's not a very tasty piece of meat though!
