You can only the different salts interchangeably if recipes use weight units rather than volume units. Why don’t you use weight units for dry ingredients and leave volume units for liquids?

I like your thinking and many restaurants these days do indeed use recipes entirely in grams, for both liquids and solids, because weighing on a precise and calibrated digital gram scale is more accurate than using not-very-precise volume measurements using kitchen containers with volume measurements. (And scaling recipes measured entirely in grams is as easy as multiplying each ingredient amount in grams by the appropriate scaling factor.) The problem for home cooks is that many recipes require such a small amount of certain ingredients like salt, baking powder, or cayenne, that most home cooks do not own a digital scale with the needed precision (1/100th of a gram) to measure those ingredients accurately for the yield of the recipe they are using. However, decent digital scales can be purchased for about $20 to $30 these days, so in theory, one could weigh every component of every recipe, if desired. It will certainly improve consistency!

If you want salt to dissolve, don't spend $4 a pound on Kosher or sea salt, use table salt. If you want crystals, use Morton, because of the large crystals that do dissolve more slowly. Diamond Salt is like a carbon steel pan, it's second best at everything, which makes it good for a restaurant kitchen so you don't have to deal with multiple pans (or salts) At home, Morton for large crystals is best, but if you want it to dissolve in water then $0.39 a pound table salt is just fine; and for a home cook, it's not a burden to keep both around.

You could try tossing sliced yellow onions with some oil and broiling them to achieve places with a crispy texture. You would want to adjust your oven rack to the upper-middle position (a little farther away from the element), or turn the broiler temp down, if your oven has that option. Let me know how it goes!

Perhaps make a chutney that has no salt and quite a bit of lemon juice. You could also break up the pakora and eat them with another food to create a brand new hybrid dish. Don’t be afraid to get creative!

You could try making a lemon-y mayo to help cut the salt. Or cut up the patty and add it to another dish. Or add more unsalted toppings to the burger. Let me know if you try any of these!

Some ovens require you to keep the door closed in order to function. Makes sense from a company safety standpoint. Just open and check frequently!

What if you have an older gas oven where the broiler is in a drawer do you just leave that partially open? Crossover people that have the kind of Broiler in a drawer I kind of don't blame them for not using it that often especially if they're older.

Yes, those broiler drawers can be more difficult to access. You can either leave the drawer partially open or just check on the cooking frequently. I don't blame anybody for not using it if it's too difficult!

I have never tried this soup, but based on the recipes I read, I would say to add some more water to start. Perhaps more of the greens. You're looking to add more of any non-salty ingredients. You can also add any vinegar of your liking. The acidity counterbalances the salt. Let me know how it goes!

🤯 Wow! Thank you for this video! I over salted my rice, I added lemon juice to it and it worked! Mind you it was still a tad salty but not as much as before and the very slight lemon juice flavor made the rice taste even better!
