I'm so happy to hear this helped! That sounds like a lovely dish :) I'm sure the little bit of sweetness created a nice balance of flavors. Did you use anything acidic in addition? (Like lemon juice or vinegar?) Sometimes the trifecta of salty, sweet, and sour is mind-blowing.

@Tabula It was a stew. I made turkey wings using a new recipe that required "cream of chicken" soup (canned soup with a lot of sodium). I also used "all-purpose seasoning" and turkey base (bouillon), which resulted in an extremely salty dish. I used brown sugar and some white vinegar to dilute the saltiness.

It sounds like you did pretty much all the right things! I wonder about thickening it with flour and letting the additional starch mute the saltiness. Be creative, and try to add other liquids or starches to further dilute that salt. Good luck! Let me know how it goes.

What i usually do is remove some of the sauce/ soup then add water to dilute it. By removing some of the original sauce, It reduces the amount of salt in the food. Then add water to preferred amount of sauce then adjust the taste from there. I came here cause I couldnt do this trick so thanks for the tips probably gonna do the potato or the citrus.
@TabulaCooking
@TabulaCooking 2 жыл бұрын
Adding water to dilute the concentration of sodium is a great technique! To clarify, you don’t need to remove any of the original dish, unless you need a specific amount of finished product for some reason. Taking some of the over-salted sauce out won’t reduce the concentration of salt-you’ll simply have less of the too-salty dish. Also-I want to reiterate here in the comments that the potato trick IS NOT an effective method to lower the sodium concentration. I may not have said this clearly enough in the video, as a few people have commented that they’ll try it. Cheers to well-balanced flavors!

I salt brined chicken thighs with msg overnight and uses way too much salt and the next day i fried it and it was the saltiest food ive ever eaten. Lesson learned is not to pour the salt brine in a bag with chicken and instead sprinkle the salt brine on the chicken on a tray then put it in the bag. Now i have 4 thighs worth of extremely salty chik fila nuggets
@TabulaCooking

Sorry to hear that happened! You would be fine to use a bag again, but you would just need to reduce the concentration of salt. You actually had a great start with the overnight salting+msg! Super flavorful and umami. Nice work.

@TabulaCooking
@TabulaCooking 2 жыл бұрын
Well, the pasta has been salted. There's no changing that. But what you can do is incorporate them into a dish with unsalted (or less salted) components. A creamy (perhaps cauliflower-based) sauce can help. Acid (like lemon juice or sherry vinegar) will reduce the perception of saltiness too. I would also add a bunch of sautéed or broiled vegetables. Peppers, onions, and broccolini come to mind. Hope this helps. Let me know what you end up doing!

Are these tips good for those of us with high blood pressure???
@TabulaCooking
@TabulaCooking 2 жыл бұрын
When I was teaching a class for Kaiser, a kidney specialist said that when cooking at home, you don't really need to worry about limiting salt. The real trouble comes from processed and fast foods. I use Diamond Crystal kosher salt, which is simply a minimally processed sea salt. This ensures that I'm only getting sodium chloride in my salt-no other additives. As for the tips I mention to reduce the perception of how salty a dish is, they theoretically shouldn't affect blood pressure. Always consult with a dietician for specific advice on the effects of foods on health conditions. Cheers!

The easiest solution is to add more of the original ingredient. If you have more eggs, simply cook more and don't add salt to that portion. Otherwise, finding another way to dilute the salt content. Pair it with something starchy (toast, rice, noodles, etc.) or add an acidic or sweet component. Hope this helps!

Can you add other non-salted ingredients? Vegetables, etc.? Lemon juice, vinegar, or hot sauce could also help by adding acidity. Let me know what you end up doing!

@TabulaCooking

This is a tricky one, given there are so few ingredients. If you're open to reimagining the dish, you could take it another direction. You could add lemon juice, a lot of fresh basil and/or oregano, some toasted pine nuts. Just things to lower the concentration of salt. Let me know what you do and how it goes!

Yes, you absolutely can! Sweet, sour, and salty can be an amazing trifecta! What food are you trying to balance?

I made a really expensive beef burgundy!! I got the beef broth from the butcher.. it was too salty It took forever to make, I used an expensive beef tenderloin for the meat so it’s super tender, and it’s braised in the oven for 3 hours.. there are lots of intense flavors.. French wine, garlic, onion, thr beef… how do I fix without ruining it? ☹️ maybe use something acidic? More tomato paste?

What would help if I made my greens to salty
@TabulaCooking
@TabulaCooking 2 жыл бұрын
I would take the opportunity to get creative! You could add them to a soup, mix them into rice, beans, potatoes, or another starch. Definitely adding some fresh citrus juice or vinegar would help. More fat too. Sorry for the delay in reply; I'm sure this specific case is moot at this point. Cheers!

You could try some vinegar-balsamic would be nice because it's also a little sweet! You can also use a bit of sugar to help balance the perception of the salt on your tastebuds. Let me know how it goes!

You can rinse them off or wipe them with a wet paper towel. How long have they been sitting with the salt?

@@MOBU76 I wouldn't boil them at this point. It will change the texture and likely overcook them. Perhaps cut them into smaller pieces and distribute them in a dish. Good luck!

@TabulaCooking
@TabulaCooking 2 жыл бұрын
You could serve it with some extra sauce that is unsalted. Get a can of tomato sauce and just add a little garlic and some dried or fresh basil to it. Another approach would be to turn it into a baked pasta dish. You could cut it up into smaller pieces, sauté some spinach (without salt!), and layer it back into a baking dish. Just cook it again until warm. It's all about getting creative and embracing a new idea! Let me know what you end up doing!

Depending on the dish you're putting it into, I would definitely start with adding acidity-lemon juice is my favorite. Can you pair it with some starch? Potatoes, pasta, rice? Acid and starch should help. Finding some way to dilute its concentration and impact. Let me know how it goes!

I tried adding vinger to my pasta... 🤢 sorry that didn't save it
@TabulaCooking
@TabulaCooking 2 жыл бұрын
Sorry to hear that didn't work! It takes some trial and error, and different dish formats require different treatment. For example, vinegar might work better in a soup. One solution could be to add more unseasoned pasta to the dish. The idea is to spread out the salt that's in there and make it less perceptible to your tastebuds. Thanks for sharing this comment here. Cheers.

Hi! I hope this isn't too late... I would get creative and see if I could add more crust and make it into a calzone. Just trying to find a way to add starch to lower the concentration of sodium. Adding olive oil and/or something acidic (citrus juice, vinegar) as a garnish could help too. Let me know if you're able to try any of this!

Oh my gosh, it seems I’m the only one with an over-salted over-roasted chicken (whole) and veggies. I think I’ll cut up a small piece and try the lemon idea. I’ll add onions, fresh herbs, etc, (no more salt) and try to make a chicken salad.

I have never tried this soup, but based on the recipes I read, I would say to add some more water to start. Perhaps more of the greens. You're looking to add more of any non-salty ingredients. You can also add any vinegar of your liking. The acidity counterbalances the salt. Let me know how it goes!
