It's the notes themselves: C, E, G. You can play them in any order you want.

This seems like a lot of hard work… I best get started then. I find that practicing and memorizing all this stuff is more enjoyable when adding in improvisation. It takes the staleness out of the repetition.

why is Dm7 considered a subdominant when it is a ii chord? what happened to supertonic?

It is formally a supertonic. However all degrees can be classified into one of three roles: tonic, subdominant and dominant.
