Hey Chasugc, no, that's Halibut, its a flat fish, they don't scale them. It's faster to skin them. They way they are filleting them they never touch the guts. It stays in the carcass. Thanks for watching and commenting. Have a great day! 🐟🐟🐟

At the fish clean station in Chesspeake Beach MD, usually asian peeps collect the carcasses for fish head soup. On a rock fish, there are two big meaty bites tucked into the skull, just behind and above the eyes. It aint all about the knife, but a good knife is sine qua non.
