I made a living with a knife for many years, fish houses, party boats, try cutting fish on a rolling boat also I noticed that they do the sport cut, cutting through the ribs, much easier then the restaurant cut, where you cut around the ribs which I did. Halibut are easy to cut. Do it a thousand times a day and you get good at it. Got paid by the pound in the fish houses.
