I don't think it needs to be one or the other. It should be diversified. The big farmers are for industries but small and urban farmers are better for distribution to humans

How long do they keep after harvest using the Clam shells and drypack packing method? Do you store them in a fridge above freezing? I have a family member who's expressing doubts about preserving the quality/nutrients in the microgreens saying they don't last long at all, that it's best to harvest and deliver on the same day they are going to be used like at a restaurant.

It is not necessary to pre-soak radish - they often grow better without a pre soak. In fact there are very very few seeds that benefit from a pre-soak.
