The Bagoa Do Mino Albariño Lagrima is produced and estate bottled by REN winery in Pontevedra Spain. I sometimes add crab but I find that the dish is much easier to eat without having to crack crab. Plus it’s a little less messy.

Trying to figure out your wine. Albariño (lacrima) is the particular wine from the Albariño grape. Rias Baixas is the region in Galicia , Spain. Ba’goa do Mino is the winery/ producer? Too bad you can’t add crab routinely to a Cioppino recipe . Prices have not come down since Covid.

I like your recipes as they are relatively easy and include ingredients easy to get without going online. I have to try the homemade shrimp broth trick. The 2032 Amici SV wine will require a celestial Amazon Double Prime delivery ,however 😳.

Thank you for the comment. I don’t think they’re in the pan long enough to worry about burning butter or needing a high smoke point oil. I really appreciate it.

Use clarified butter, or just hold off on the butter till the very end if you wanna get a better sear. Butter burns too easily. I’d recommend searing with avocado oil or another high smoke point oil, then baste with butter and then drizzle the plate with olive oil if you want both the butter and olive oil flavor. Looks great though.

Chef Glen, what do you do with the oil? Your potato salad recipe looks great, but might convert your fried chicken recipe to oven fried. Have you tried oven fried and air fried?

I haven’t tried oven fried lately. When I did the oven fried it was with a different recipe. I have yet to venture into the world of air frying. I appreciate you always supporting my channel. Thank you.

Yay! Can get wine at Whole Foods. I made a simplified version of the Sammie and it was great. My wife has become finicky over the years . She likes grilled cheese Sammies and select wines. Win, win with this recipe.

Okay one more question about potatoes. Do you find Yukon gold make better mashed than Idaho? Or no preference?

They are both great, but I usually prefer the Yukon Gold. Personal preference.

The depth of the sauce color is due to the red wine?

That definitely contributes to the color. The fact that the meat braises in that liquid helps to give the sauce depth of color. Thank you!

Does this wine choice resemble a shirazz? I asked because the flavor profile reminds me of a shirazz.

They are a a little different. I believe that the Shiraz/Syrah usually really takes on the character where it is grown where the Mourvèdre’s biggest character is the depth of flavor in the grape. I could be wrong. I’m still learning.
