Thank you for your comment! Beef is the best choice, but if you need a substitute, I recommend using pork instead of chicken. Use pork with a lot of fat, preferably in thin slices. In Japan, this is known as a different dish called "butadon" (pork bowl). I'll do my best to share the recipe for "butadon" soon!

For mirin, you can substitute 1 tablespoon with 1/2 teaspoon of honey and 1 tablespoon of dry white wine with a similar alcohol content. Thank you for your comment! In Japan, you can find soy sauce, mirin, and cooking sake anywhere, but overseas, they’re mostly only available at Asian markets. Still, if you want to make delicious Japanese food, I really recommend getting them! Pork belly with or without the skin is fine. However, I recommend using skinless pork belly. The skin can sometimes have hair that’s difficult to remove, and it often has a strong odor.

For a substitute for cooking sake, white wine or mirin is recommended. If you can’t use alcohol, it’s also fine to skip it. The role of cooking sake is to add umami and eliminate unwanted odors, but other seasonings generally achieve similar effects, so omitting it won’t make a big difference.

Is there a specific length when you're making those incisions? Or do you eyeball it and just make sure it isn't too deep of a cut after you flattened the pork belly.

I used dark soy sauce! I recommend dark soy sauce, but Japanese recipes sometimes use light soy sauce as well!

I recommend a square frying pan because it’s really practical! It’s especially great for making tamagoyaki, so if you make them often, it’s definitely worth buying!

One of my favorite dishes. Now if you could do a curry and orange chicken tutorial/recipe Next video up is your stovetop rice. Rice is just perfect it goes with everything ( Japanese curry is my favorite curry )

Yes, you can use these! - Sake - Shochu - Dry white wine (with an alcohol content of about 15%) In the worst case, you can still make a similar-tasting dish even without adding any of these.

Just use sugar and water. Better than most mirin in the market which is mostly fructose.
