I stumbled upon your video by chance, suggested by KZbin's algorithm, and what struck me was how you didn't waste a single drop of batter. The technique you shared for scraping every last bit off, from spatula and egg beater was impressive. So many cooking videos waste a considerable amount of food, but your approach reflects your professionalism as a baker and subtly promotes the message of not wasting food. As a passionate home baker, while baking; my mother would assist me by using similar methods to ensure that every drops of batter is scraped down. I shall certainly try this pistachio cheesecake. Why not just use powdered sugar instead of granulated sugar? Seems like it would make for a smoother batter. Lastly, the instructions didn't include flour. All basque recipes include flour or cornstarch.

Did that batter and final product look coarse to you? It's unecessary to use powdered sugar. And the creator didn't call it a basque cheesecake so I don't know why you're whining about that either.

What kind of pistachio do you use? Some paste has a lot of sugar. Do you refrigerate cake after bake or keep in room temperature?

Pistachio paste depends on your pocket, homemade 100% Pistachio paste or commercial paste with 40-50% max , Refrigerate the cake or room temperature if you live in a cold country.

Hi, I really enjoyed the video because I was finally able to make the cake I wanted so much! It looks delicious. All the cheesecakes I've made have been made without the oven, but this one is perfect for my mother's next birthday. She loves strawberries, and it's also very fluffy like a sponge cake. At minute 3:40 of the video you add strawberry powder, but yesterday I made it with blueberry powder, and it is also an exquisite combination of flavours. Besides, I added a chocolate coating to give it sweetness. By the way, could I use sweetener instead of sugar? I want to make this recipe for my grandparents, but they are diabetic and they can’t eat desserts with that much sugar. For the next video you could record the process in fast motion to make it smoother. Even so, the video is very visual and explains the process perfectly. I look forward to seeing your next post. Thank you for liking the recipe☺️ Using blueberry powder and adding chocolate coating are great ideas. I'd like to try it too. I don't think it's a problem to use cane sugar instead of granulated sugar. I think it would be difficult to use liquid sugar such as syrup without revising the recipe. Thank you for your advice regarding the video. I would like to improve it so that it becomes a better video.

Hi, can I know what your oven setting is while baking this? My basque cheesecake always crinkled on top and does not have gooey centre. 😢 My oven setting is heat on top and bottom (conventional).

The wrinkles may be due to the high water content in the recipe. If your oven can be set up or down, it's best to set the top heat to 210-220℃ and the bottom heat to 170-180℃.

The oven has 5 fan settings, and I am baking on fan 2. The image is that the firing temperature is 210℃, which means that the surface is thoroughly baked and the center is moist and gently heated.
