Sorry mate. Different ovens have different temperaments. Try to look for the 'popcorn kinda' smell next time, maybe your oven would do it in 6--8 minutes

Another tips for a juicy tender chicken...cook chicken in an open pan...(kadaai).... Dont add water..instead add butter or mustard/olive oil if it gets too dry..while cooking..add ginger garlic paste half way while cooking....keep the flame medium...not too high or low... Avoid pressure cookers

Dont use sunflower seed oil. In fact, DONT use any seed oils! They're bad for you. Butter, Ghee, Coconut oil, avacado oil and Olive oil should be the only thing in your kitchen.

you have put lot of garam masala and without onion i doubt it will taste good as garam masala will make it bitter and onion's sweetness balances it out. I think you shouldn't have put garam masala if you are making it without curry.

So the total wait time will be around 15 hours before cooking?? Fresh chicken> refrigerate for 5-6 hours> defrost for 15 min > marinate > refrigerate for 6-8 hours > defrost > cook ??

You can get refrigerated chicken from the market, makes it easier that way. Ideal marinades would be overnight - but even a 30 minute marinade does the trick. If you wanna cook leg+thigh pieces without waiting too long for the marinade to settle, just put some gashes on the flesh so that js cooks faster, and absorbs the flavour better ✌🏼

If you tolerate spice pretty well, you can always change up the chicken by making different chicken curries. Salmon and lamb are also really good options. I try to avoid pork, even though it’s cheap and has good protein it’s not the best for heart health, but you’re young so it might not be an issue for you. Happy cooking!
