From my research MSG is a naturally occurring compound and provides that umami experience that is reveled over. LIQUID SMOKE is another product that is demonized when it's nothing more than the condensate collected from burning wood. Entertains me that people wave danger flags for using it but smoking meats (hot or cold) is viewed as a culinary experience. If there ever was a perfect example of "ignorance is bliss" you just read about it. Another marketing joy to see is how people who want to remove nitrites from their diets gravitate towards "celery powder" utilized products without realizing celery naturally has higher concentration levels than allowed by FDA but because it isn't sodium based it CANNOT be called a "curing agent" when in all aspects it does the exact same thing! Nitrite is Nitrite, you sheeple!😅

Well, it's not that they grind it better....it was just a really cool shop. BUT, they did grind it fresh. I said that I wanted 3 pounds and she tossed 3 pounds of meat into the grinder and then packaged it right there behind the counter. Just a cool place. They make all of their own bologna and different deli meats with no preservatives.

Yep! From what I've seen, it's usually "corn syrup solids". Not all of them, but a lot of the big name sausage brands use it.

Preservatives. European sausage is made the same way you make it and has maybe a quarter of the shelf life that store bought does in the US

@yojimbo9 I don't blame you for not doing ham on Christmas....there are definitely better things you could make! LOL For some of our Christmas dinners, I've been doing some awesome, meaty bolognese....but, if you're doing ham, this version is definitely a huge improvement.

No, I didn’t. I thought about trying to chip them out. But, I’m afraid that it’ll do too much damage to the trees. Those trees have also absorbed the old fence row as well…so, they’re full of metal. LOL I was amazed at how quickly the trees had grown. It’s been a few years, but I didn’t think they’d grow THAT fast!
