So how does a "German market" grind porkbutt BETTER than anybody else to make superior sausage?

Well, it's not that they grind it better....it was just a really cool shop. BUT, they did grind it fresh. I said that I wanted 3 pounds and she tossed 3 pounds of meat into the grinder and then packaged it right there behind the counter. Just a cool place. They make all of their own bologna and different deli meats with no preservatives.
