In the US Virgin Islands we also add cucumber to our souse, and we use the water where the souse was cooked; then we eat it while it’s still warm with potato salad. Thank your for the recipe.

Love it, We do the same in Guyana with a few exceptions. I've never added Rosemary nor Chadon Benny. However, I do add two types of thymes and ginger. Love love love the flavour it gives.

I make mine with parsley, thyme, Celery, cilantro, bell peppers, habanero pepper, garlic, purple onion, spring onion and use Extra virgin olive oil and some white vinegar. I don't add any extra seasoning to it

I add mustard and a little ginger and normally don't use onions. I add onions while I'm cooking instead.

Why grate the plantain if it will go into the food processor to make a butter texture.

Grating makes it easier to blend because of the sticky nature of the plantain larger chunks may not come out as smooth
