I just bought there today, it's definitely a mild (sort of) love the Flavour profile it reminded me of a pickle spice we use to make Mango pickle. I am used to eating Habanero and ghost peppers. What other pepper can you recommend, I am always growing my chillie pepper collection 😋

I recently tried a recipe that called for gochugaru, but my local Asian market didn't carry it, so I substituted regular chili flakes. The dish turned out so spicy hot it was inedible

it is a very good savory dipping sauce for veggies and snacks for me but there are other uses. the color might be added because of marketing reason. i doubt it has anything to do with the paste quality. maybe in the old days and it was passed down through the generations or superstition based on word of mouth. i assume. nothing personal just a comment

You are wrong about the color of Miso , because there are many kinds of Miso which are different in color and one of them has similar color as Doenjang.

Thank you. I appreciate these informative videos. One of the main reasons I prefer doenjang is for its versatility. Miso is very delicate and must only be added at the last stage (or you will kill all the beneficial probiotics). Doenjang is much heartier and can withstand a stew (and reheats), and as you know can be used as dipping sauce, for noodle dishes, etc.... I feel like you get more value with doenjang. I have seen very expensive aged miso at a Japanese supermarket, but have not tried it. Lastly there are many darker miso that has a richer flavour, but am not sure if those are any less fragile.

Finally! I am Korean living in European country(moved here from SEA 4 years ago, hello!) who's craving for Kkaennip so much. whenever I search for the seeds on Amazon, it's often confused by Shiso. I am so glad to see your video is explaining the differences. Currently, I've got a healthy amount of green Shiso plants in my garden from my friend and now on my research for finding some recipes to use them proper way as Japanese people would use except just using as a decoration for Sashimi. but again, the results are all mixed up. would there be any recommendation how to eat the green Shiso?

I typically just use aka miso in place of doenjang. It may sound strange, but I prefer aka miso because it's more strongly-flavored than doenjang. Some people in the comments seem afraid of the funkiness of doenjang, and seem to only think of shiro miso, but I probably need an intervention.

When I don't have and don't want to use another very different chili, I use a mix of 1tbsp Chinese Paprika (red sweet pepper powder) + ½tbsp of Cayenne (very hot, flakes) + ½tbsp of Chipotle (fumé, mild) and it's a very fine combo ! Coreans can't tell the difference 😊

I bought some cutting celery and a Perilla plant came up in the pot with it lol ...I had never seen this plant before so had to use an app to find out what it was....I also had the plant choy sum come up in a pot too that was meant for cutting celery as well Lol. First time this happening to me but now I learned 2 new plants and I put them in the ground lol..the choy sum is a pretty plant in the garden and I put it beside some bok choy that I planted. I'm not chinese just a southern white chick lol from AL! BTW I don't like licorice either, so I'll be finding another use for it! I think I will like the choy sum though!
