Hi, I like your channel. Let's keep everything easy and simple. Set the grate on concrete, okay. Next, I want you to wire brush the grate to remove what you can, okay. Now spray the grate with easy-off and leave it alone for 15 minutes, okay. Use the wire brush again and then use a scrub brush with soap, okay. Now rinse with water, okay. DONE!!! Okay. Bonus, your concrete looks great, okay. KEEP IT SIMPLE!!!

Oak. Do not use raw wood. Hickory and pecan works well also.

@ yep. I harvest most of my oak from my oak trees. I cut off a branch cut the branch into small chunks and let them dry out for a few months and then smoke with it.

The results are good on both. I do like this one a lot especially if you have a pellet grill. This one is also a lot more straight forward.

Hello Fred, Originally I started the video with 3 different setups to accommodate the size of the ham, and decided not to do that because it took too long to get into the recipe. I think I have seen that done with a beer can chicken though. Take care, thanks for watching.

Hello, that would have been a great detail to add. I should have thought of that. Filming this video was a bit stressful because of the time constraint of ‘under an hour’ that I put in myself. Normally I have a lot of time to move cameras around and getting things done… but this one was a rush the whole time.

I have three questions. 1. What grade did you use, Prime or Choice? 2. Did you have to add more water to your trough? 3. In your honest opinion, would recommend the Weber Searwood 600 over a Recteq? I want a pellet grill for smoking only. I already have the Weber 26” kettle I use for grilling only. I’m torn between getting Recteq Deckboss 590 or the Weber Searwood 600.

Prime from Sam’s I only put water in at the beginning I really enjoy using the Weber 600 more than my Z Grills. I have never owned a Recteq… I don’t have an educated opinion about that one.

Can you do a video on pallets for your Searwood 600 xl, what are you using, any issues with what you’re using pallet wise? Are you just using stock Weber brand pallets or other pallets?

I use 3 different pellets. I either use Weber, Traegar or Knotty Wood Pellets. You can get all of these from the Home Depot website. I may possibly do a video on these. I’ll put it on the list.

The reason you can’t use the wired temp probe is because the wire would get tangled with the rotisserie as the rotisserie turns.

If I remember correctly this one was a 22 hour brisket. Took longer than I thought it would. I have not tested it with another thermometer but I think this pit runs about 10 degrees cooler than it displays... wich is why it takes a bit longer. Lately I have been setting the Searwood to 230 or 235 and that gets me in about the time I would expect.

Looks great! Wish I was there to try some. I hope you don't mind but just a tip for viewers: You have to be careful to not 'over smoke' poultry. It's very important. It can dry out the outside and make the skin like leather. I know, I've almost pulled some teeth doing it, lol! Cook it unwrapped until it reaches a nice color and gets some smoke flavor in the skin/meat and then wrap it for the remainder of the cooking process to retain the moisture.
