I make my pizzas using a very similar technique, including the staedler calculator. One thing i do is sprinkle a little italian seasoning and garlic powder into the dough during the final mix for a little more herby crust.

Good technique, awesome looking pie! I’ve been making my own for over 40 years and do the exact same thing. Haven’t been out for pizza since and used to live in New Haven, Ct. the best pie town ever!

My wife has an Aunt that lives in Ct. we went to a pizza restaurant that was supposed to have been the best in the US. I don’t remember the name of the place but I remember the pie being huge thin with lots of char on the crust and toppings. It was really good… this was aboout… 12 or 13 years ago.

Hello Flyingotto! Pizza Master, WOW! I have been waiting for a pizza person to tell me how much I messed up this pizza thanks for not roasting me. I looked up 6-in-1 on amazon. These tomatoes on amazon are already ground. Is that ok? I don't see any whole tomatoes. I am having so much fun with this pizza oven, and making all kinds of bread using the pizza dough recipe.. who knew the same recipe can be used for other types of bread... it is just the technique and hydration that is different. I wouldn’t roast you. Your attention to detail is inspiring! Yes it’s ground. I found this tip on a pizza blog decades ago after many attempts like you to find a good base. You can add stuff if you like but it’s great right from the can. I buy the big can and split it up vacuum seal and chest freezer. I do that with dough as well to make a quicker last minute pizza meal without all the prep. Just let it thaw and rise on the counter for a few hours.

I freeze dough as well. I usually make 6 dough balls. My mixer does not do more than 6 well. Thanks. I’ll order that 6 in 1 and give it a try.

But I'm not sure about taking the difficult out🤔😄 I admit, I'm just lazy about making the dough, but it's mostly because it needs to be made the day before..... It's absolutely better dough, though, and really isn't all that difficult. I'm just lazy😂

The is really only about 30 to 40 minutes of actual work for the dough. There is a lot of waiting for sure. Timing is important.
