Why does the thread cut in between while stitching

I have that book and found the recipes hard to follow with the three different columns for Levine, dough, and bakers percentage.

I had trouble with the flour. It called for "white" flour and I went with all-purpose. Will go with bread flour next time. It needed more strength for sure.

I think my model is really old because it still says new home and the thread is under the needle not on top of the machine IM A TEENAGER IDK HOW THIS WORKS HELP 😂
