What about freezing the meat after searing and cutting it paper thin with a deli slicer? Can I do it this way?

Hi my friend, Yes you can, but not sure with a slicer… normally I do slice by knife when the meat is still frozen.

Hey bro, You can try it with any fish!! Also you can use normal white miso instead of Saikyo miso. Saikyo miso is nicer though…

So glad I found his channel. His restaurant has been my favourite Japanese restaurant (probably my favourite restaurant in general) in Sydney for over 10 years. I have a question though, why not promote your restaurant on your channel?
