Ingredients: 1 head of cauliflower 2 carrots 1 cucumber 1 cup shallots 5 cloves garlic 1/2 cup sliced ginger Handful Thai chili pepper Brine: 1 tsp salt 1/2 cup sugar 1/2 cup vinegar 2 1/2 cup water Mix 2 tbsp salt with vegetables, let sit for 25-30 minutes, rinse well and drain to clean jar. Combine the ingredients for brine, add to jar, mix and store. Ready in 2-3 days.

When i am ready to make this i will replace ground pork with chicken Gizzard, chicken heart, or pork liver and heart i saw this on other Vietnamese channels. Nothing wrong with pork, but i like chicken better
