The custard has to touch the cake so that it can soak up some of it and become moist (there's nothing worse than dry cake in trifle) , plus you're supposed to have multiple layers, here is the PROPER method : Jelly Fruit Cake peices Custard REPEAT till you have used up all the ingredients and have multiple layers.

Sago and Tapioca are from different plants but yeah very similar starches that can be used most of the time interchangeably.

Tapioca is larger than sago The sago bubbles are finer than tapioca. I know because my gran used both in various dishes

Your right sago comes from a palm and tapioca comes from the root of a plant also one is white the other is a brownish colour . Also this recipe either needs more sago or less milk my mother was a cook and hers was thicker , more like a rice pudding when finished . Its not as good when too sloppy .@@TracyD2

I grew up in Pinelands and my (American) Mom would drive us out to Bellville for Burger Fair, despite there being a location nearer to us in Goodwood at the time. She wouldn't let us get out of the car because she thought the grounds were too grubby. Few cars had air-con in those days, so my siblings and I would just roast in our big Valiant station wagon, devouring our chow like it was our last meal. I always opted for the delicious ribs 'n' chips. There were no pork sandwiches or anything with mushroom sauce back in those days! Plus ça change, plus ce'st la même chose!
