You probably tried making classic Osso Bucco. It is awesome. For recipes for shank, treat it like beef stew. Sear the shank pieces well then use like stewing beef. Propper Osso Bucco is worth doing.

The most important thing to know about raising Highland cattle is that they are really only an economic proposition on marginal land that is more or less useless for anything else because they will eat anything and can withstand cold and rain better than any other breed. They are extraordinarily resilient to inclement weather and poor diet. So would you be if you were raised on a Scottish hillside with precious little to eat and had to withstand long, hard, cold winters outdoors. However, they are no good as milkers because of low yields and because their calves need nearly all of it anyway in order to thrive. Most importantly of all, they do not reach maturity until they are at least thirty months old and it can take up to three years. This is nearly twice as long as it takes more commercial beef breeds to mature to slaughter and while you might get a little more for Highland beef as it's a niche market, you certainly won't get anything like twice as much for it. Anyway, their beef is not as tasty as Aberdeen Angus in the first place. I'm Scottish, so I might know a little bit about it. Still, they're lovely gentle beasts and ideal for the hobby farmer. Their history is quite extraordinary as well. I'll bet you didn't know that the word 'blackmail' is Scottish in origin and I can't be bothered telling you why, but it's all to do with these cattle, which were mainly black three or four centuries ago.

DNA testing will let you know if there is anything else in your unregistered cows; with genetic testing, some of these registration organizations should allow you to register your cows or dogs with that proof. They could make extra fees for the organization and it could be some special registration without the lineage that this animal has been proven to be pure. It will allow for more registered stock or dogs, etc.

I have been interested in Highland cows for years, long before I decided to get my own acreage. I wanted highland cows because they are smaller than the normal breeds often seen on farms and ranches.. I also live in Canada so knew that the highlands would do best in the kind of winters we get up here.

It's nice to see Americans keeping Highlands and not bothering about their colour. Here in Scotland we've been breeding out everything except the iconic honey colour for centuries. In fact, naturally they were originally mainly black, which gave rise to the word 'blackmail', which was the money demanded by Lowland Scottish clans to allow Highlanders to drive their cattle south across their land to the great 'trysts' or cattle auctions where the beasts were sold, slaughtered, butchered and the carcases mainly salted and barreled to feed the Royal Navy.

Those are long haired cows used to cold weather. There should be a lot of shaded areas for them. I do not see any covered areas of shade, even that "barn type" structure was East West facing it looked like, offering no shade at all. Those animals are cold climate animals and should not be in full sun like other bovines.

My sister had four highlands with an aim for the meat, 5 years later she has 12 as she said they are too adorable and she has become so attached that she has gone vegetarian (🙄). I was so looking forward when she initially said they were for meat and will be totally organic (🙄🙄). The calves are so cute and friendly, my kids can’t wait to visit her and we’re talking about turning veggie too. (😂). Nice amount of meat you harvest and I bet it was delicious 👍🍻
