Did you have any mold issues with the wood with there being so much water? Or was the ventilation enough for it not to be an issue? I am worried that if I try something similar it will be covered in mold for a while.

Mudskipper. The name eludes to a important part, namely mud / clay. A lot of species need it to burrow and mud helps them regulate moisture. Sand on the other hand could irritate their skin and gills.

You should try saltwater macro algae. Also, if you make a bigger tank in the future, consider getting mollies since they can also do brackish water.

Killifish & guppies can be tank mates with it. It might enjoy seeing others

This is a fantastic little build, but mudskippers should be offered mostly mud with a tide. I've been reluctant to get mudskippers for this reason, as I can't provide it. I'd advise you go join some mudskipper groups and see how it's done.
