New to cooking here. I watched a video about cast-iron skillets and the person there said to season the inside AND outside, but this video only seasons the inside. I'm a bit confused now. So pot and skillet need different seasoning coverage?

Not outside. The seasoning will turn the color, red, blue etc will turn black. Be careful when u do rim! Raw, not enamel need seasoning in & out!

I got a staub pan, the black rough interior would grab at anything I fry in it. It sticks and hard to clean. I can see the brownish stucked gunk so I deemed it not clean. Anyhow I am considering seasoning it since that’s recommended by Staub. The black interior would hide any brownish tinge of the seasoning. Because of the experience, I preferred Le Creuset. I got 4 pieces of that brand. My staub pan I only used thrice coz I find it a hassle to clean very well.

This video was sent to me as a response to my question but it doesn’t address my particular inquiry. I received my new Staub enameled 5.5 cocotte which I will use exclusively for baking no knead bread. The recipe calls for heating the empty Dutch oven in a 475 degree oven before placing the dough into it. So the question is…is it safe to place the room temperature Dutch oven into the cold oven and then turn the oven on to 475 so it heats up slowly? Looking forward to your response…

This might be a late response, but putting a cold pan in a cold oven and heating it up gradually is fine, unless your oven goes from 0 to 475 in 1 minute. Slowly heating up cast iron enameled pans helps to prevent thermal shock, which can damage the enamel coating. When exposed to SUDDEN extreme temperature changes, the enamel coating can crack or even chip off.

I see staub uk you recomend seasoning staub also in your enamel comparison videp there was metal utensils used. Other staub sites on youtube says no metal utensiles and no seasoning needed what is right or wrong here?

It could but these enameled cookwares are designed to weather those abuses. They will scratch but not enough to gouge out the enamel. Using a wooden spatula or silicone would be best but it is not life ending situation if someone used a metal spatula on it.

Do you guys realize that this single video is causing customers to treat their enameled cast iron just like it's raw cast iron, and attempt to build up multiple layers of seasoning? Isn't the purpose for enameled cast iron to eliminate the need for any seasoning prior to or after use? Why would you release a video that suggests that Staub needs to be seasoned before the first use? I've talked to numerous people at Staub and they have all told me that this kind of seasoning is not required, but what is required is appropriate cooking technique. Why leave the video up?

The best video tutorial for a grill pan. In my view, the best part about this tutorial is the gradual heating of the pan. I recently ruined my beloved Debuyer carbon steel pan and got it warped - I suspect sudden change in temperature caused this and ever since I gradually raise the temperature and have no issues.

LOL! i am french and i never saw anybody in my life spreading a crepe with the wooden stick. everybody just tilt the pan around to even the batter. i think the wooden thingy is a commercial thing invented to make tourist more interested by the people making crepe in the stalls.

This pan is made of cast iron, it's heavy AF. Tilting and flipping is much harder, hence they provide the wooden utensils.

Heat the pan for 20mins on medium heat, wipe with oil, let heat 5mins and should be good to go

@@natabulous6429 Hi! I figured out the issue and for me it was because there wasn't enough emulsifier (eggs) in the batter. I added egg and it all fixed up.

Hi, the STAUB cocotte is certainly used to cook lentils so of course the coating should not come off. If there was a manufacturing issue then this would be covered by the warranty - so please do get in touch with your local ZWILLING subsidiary to discuss.

@@staubuk615 I tried. They said it was our fault. I guess it may have been because I diddn't realise you're meant to establish a coating before use. Very expensive lesson. Saved up - was a gift too.

Everything sticks and burns I have no other pans that act like this and I only cook on medium or medium Low on a smooth cook top. I Almost gave it away today and I paid $300 for this pan
