If you know what you're doing and aren't 'online' so to speak and know your system is clean of any viruses or malware shutting off Windows Defender, or any other ant-virus you use for a gaming session is fine and it will often reap you some performance benefits. Although Windows Defender is pretty un-intrusive and bloat free compared to many other AV's so it should be fine leaving it, but hey, active file scanning is active file scanning and can make your load times slower. If you download and install a tonne of dodgy stuff from all over the net, especially torrents, then yeah you should probably keep it on. (or stop pirating things.) Just yeah, so many people have misconceptions about using AV. But otherwise decent video.
