Dear Joe. I just had the Firehouse Thanksgiving sub for the second time (3 weeks apart). It was great! I forgot my temp probe but visible steam was rolling off it. I also took a pic but didnt know how to upload it. Be assured, both times it was well above 140. So in Joe speak, I give it a 7 dot 2. That is my number! Luuuuuuv your pod. Its the best. Is it possible to quench Joes hunger?

Hot Roast beef is a paradox in itself. Best when it's red, but loses that color when heated. 100 degrees is okay if it was just heated. But if it was sitting in a heated crock pot or something, that's not good.

How hot was the au jus?

Kinda obvious to me. They roast the meat to the temp they want. 135 will give you medium rare. Then it's chilled like deli meat. They slice it for the sandwiches and add the rest of the ingredients. Then they do their melting process to "lift" the temperature. The au jus is probably pretty hot and that's supposed to raise it to a decent temp but still, not higher than 140 or the meat will turn brown. The only way to get a real hot roast beef sandwich is to slice it fresh but you will see very little pink and unless you have a line out the door ordering, well, you would have a ton of waste on an expensive protein!

always love your videos but i gotta wonder why a temp that low only gets a few points taken off. it's weird seeing you say it's good when it's also a health code violation. idk maybe laws are different in Georgia but for me that would just earn a score of "disqualified" as i wouldn't consider it safe to eat it for the sake of a taste test in the first place.

Maybe they list calories by "serving" to make the calorie count look smaller. Crumbl cookies does that. 4 servings per cookie!

Pretty sure at Firehouse you can order their sandwiches cold if you would like. So they keep the meats at a cold temperature and when you order one that is “hot” they put the meat and cheese in a steamer long enough to warm it up and melt the cheese. Because they are taking a safe cold temperature product and heating it, as long as it doesn’t stay in the 41-140 degree range for more than four hours, it should be safe from food borne illness growth.
