I made gauva cheese everything turned out very well but it has still not dried, nearly 4 days now. Earlier when I made it dried in a day Or two.will it dry.

Depends on your cooking it you take out too early seeing that it is forming a soft ball but a sticky one Then even if u remove it it will be sticky till the next day in this condition u will hv to put again in your chaty n again cook for some time and if you see the dough is properly cooked and formed a proper ball a slight hard and inside soft . And u remove it outside within 10 min u will see it is getting dry but still it is hot .in this condition u need to keep on removing with the help of spoon or spatula to get it dry as soon n then properly knead a dough n colour it and cover it with a cling wrap and then u can go with ur design even after two three days also if u keep it properly cover in air tight container or any vesel with lid

I followed the recipe but towards the end the batter dint leave the pan so I continued keeping it on heat and stirring until the sugar crystallised and on cooling it turned hard like crystals. What could be the reason for it to not leave the sides? What can I do with the hard crystal of this batter?

Firstly if u put lime juice properly your sugar will never crystallized. And u need to dissolve the sugar along with the guava batter and then u need to stir it .lastly everything u hv to continue stir till it becomes thick and stars to leave your pan add lit butter or ghee n do water testing if it forms a ball then only remove it .And most importantly continuous stirring till u see the sides as well as down pan also your batter leaves

U need to stir it properly and see the consistency .it's very tricky . Now if it's not set even if u keep on the gas in a kadai it won't set again . Before removing from the gas u need to do water test if a soft medium balls forms then only u hv to remove it .otherwise cook till it releases from each n every side of the pan even from the middle

Remove it cut into desired shape and keep for dying n then air tight container .So important is timing of stiring n removing at the exact tym .

Lovely recipe . Im a sweet maker myself BUT, i seem to hv a problem with d cordial. Its always soft or some issue so i gave up in it . Even this year i tried n its not set hard. I know for sure its d sugar ratio. So this year rather tmrw ill give ur recipe a try n see the results.
