That's Minecraft village generation and villagers AI for you. I don't know why they made the villages so they HAVE to spawn with a massive cave system under them with a million openings in the ground and the villagers are more than happy to jump down to the holes. Mojang, this is one of the biggest reasons why trading halls are a thing. I hope they fix the village generations and villager AI. Their IQ is literally lower than their shoe size. Just recently, I had to baby proof my village even more because the villagers got stuck in so many weird places. They literally jump down like 4-5 blocks and then wonder why they can't get back up again. Literally standing on a cliff side.
