you're hearing the filters kick in and out. They are filtering out the other instruments to isolate the tracks

Gotta love the basic elements of each instrument - on their own they’re nothing really noteworthy but when you put it all together we hear the chemistry of the Stones, speeding up and slowing down doesn’t matter here, no click track to get in the way of spontaneous energy. What a beautiful, stoned, chaotic sound.
