These are my favorite, thank you for the recipe. If I make some in advance for like the week to take to work, how long do they last with the rice paper? It was the best way to heat them from not sticking.

The rice paper won't work very well if you roll ahead. I have rolled them in the early morning before work and kept them in separate plastic wrap and ate at lunch. This was still good. If the rice paper dried out, sometimes I wet my hands and rub on to the rice a bit to soften.

I have several questions: do you need a raw fish, or it can be smoked? If yes, should you add some water to compensate for the fish losing moisture while smoked? Do you need small, whole fish, or you can use for example fillet's bought at store? Can you blend fish to speed up the process on the first day, or you need those big pieces for some reason? I know those questions may seem weird, but I live where seafood is expensive and not available everywhere. There are few choices.

You need raw fish. No added water is needed. You can use the concentrated portion and dilute it later. You should use whole fish with guts and all to help with the breakdown process. Grind the fish to get a good head start is recommended. Only fillet is not going to work well. Someone left a message on my post said using salmon bones and waste pieces works great and tastes great.

I just bought one of these devices... I saw the big restaurant size ones in a Chinese restaurant supply, it was like a little house with seven trays, something like that. Thirty years later someone finally made a "home" size one! I really love this kind of noodle and rice sheets, nobody makes them in my little town.... In other cities you see this as Vietnamese take-out food, and of course in dim-sum restaurants, but here I'm on my own! I think this may also work for the "cold skin noodles" that are just made of wheat starch? Maybe as a by-product of making wheat gluten from flour. I have done this myself, and it seems like about the cheapest food you could possibly make! I enjoyed this video, now I have an idea what to expect! This seems like a good thing to do outside on a portable burner, it looks like a lot of steam.

Do you see the problem she had squeezing those limes? She also didn't get as much juice out of them as she could have. The solution to both of these problems is amazingly simple: cut your lime wedges into QUARTERS and then squeeze those. The smaller objects are _much_ easier to crush in the citrus squeezer, which also means you can really crush those quarters flat and yield the maximum amount of juice.

Good luck! They are super easy to grow. I used 5' stakes but they could use a trellis or some sort of taller fence. They used to be in the wild when from my memories of picking them when I was very young.
